I love warm stack of pancakes with maple syrup and fresh sweet strawberries. Now I can't eat pancakes out in the restaurants because of eggs and can't use instant pancake mix from grocery stores as it has white flour and sugar in it. So I started making my own pancakes. Here is one of the creations -
1/3 cup wheat flour
1/3 cup soyabean flour
1/3 cup oat flour **
1/3 cup shredded carrots
1/2 tsp baking soda
1 tbsp ground flax seed (flax seed meal)
pinch of salt
2 tbsp sugar (I used turbinado)
1-2 Cardamom pods (powdered)
1 cup water
In a mixing bowl add 1 tbsp water to the flax seed meal and mix it thoroughly. Add salt, sugar, carrots, and cardamom powder to the flax seed mixture. mix it well. now add all the flour and mix it with carrot mixture. Add 1 cup water and mix it well. Heat a griddle (or a pan) on medium heat. Add baking soda to the mixture and mix vigorously. Pour a ladle full of batter on the hot griddle and let it cook on one side (until top is all dry) and flip. Cook the other side. Now stack 3-4 pancakes on a plate and add some berries or cut bananas on top. Now pour some maple syrun on top and enjoy!
** I grind quick cooking oatmeal in coffee grinder. I sometimes use unflavored instant oatmeal.
Tips - You can add 2 tbsp raisins to the batter if you like.
