12 Cakes - Chocolate Swiss roll
Ingredients
Cake Mixture
1 Cup Cake flour
1/2 Cup Cocoa
1 1/2 Teaspoon Baking powder
1/4 Teaspoon Salt
4 Eggs separated
1 Cup Castor sugar.
3 Tablespoon Cold water
Filling
125 ml Orley whip (or cream)
1 Tablespoon Castor Sugar
Chocolate Topping
200 grams Cadbury plain chocolate
145 grams Nestle Cream (small tin)
1/4 Teaspoon Butter
Instructions
Cake Mixture
In a bowl, beat the egg whites until stiff peaks appear.
In a separate bowl, sift the castor sugar add egg yolks and beat until thick and creamy then add the water and beat for about 1 minute.
Sift the flour, cocoa and baking powder and slowly add small amounts.
Fold in the stiffened egg whites.
Line a Swiss roll pan with greased baking paper then spread the batter evenly.
Bake on 180°C for 10-12 minutes.
When baked, turn our immediately onto baking paper and remove the baking paper used to line the baking tray.
Use the new baking paper to roll into a Swiss roll and allow to cool.
Filling
Beat Orley whip and castor sugar until stiff peaks appear.
Unroll the cooled Swiss roll smear cream mixture and roll up again.
Chocolate topping
Melt the chocolate on low in the microwave.
Add butter and mix.
Add the nestle cream and mix well.
Pour and spread evenly over the Swiss roll.
