08 Breads - Banana & Pecan Cake
2 large or 3 small ripe bananas
1 Tablespoon Milk
150 grams unsalted Butter
3/4 cup light brown sugar (120g)
60 grams Muscovado or similar sugar
1 Teaspoon Vanilla Extract
2 large Eggs
1 Cup Plain Flour
1 Teaspoon Bicarb
1 Teaspoon Cinnamon
1/2 Teaspoon Mixed Spice
1 Cup roughly chopped Pecan nuts
Topping
1 Tablespoon Muscovado or similar sugar
1/4 Teaspoon Cinnamon
40 gram chopped Pecan nuts
Mash the bananas and milk in a bowl and set aside.
Combine the butter, sugar and beat until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Add the Banana mixture and mix until blended.
Add the flour and remaining ingredients and mix well until the flour disappears then add the Pecan nuts.
Transfer the mixture to a lined loaf pan and sprinkle the toppings.
Bake in pre-heated oven on 180°C for 50-60 minutes.
