08 Breads - Banana & Pecan Cake
2 large or 3 small ripe bananas
1 Tablespoon Milk
150 grams unsalted Butter
3/4 cup light brown sugar (120g)
60 grams Muscovado or similar sugar
1 Teaspoon Vanilla Extract
2 large Eggs
1 Cup Plain Flour
1 Teaspoon Bicarb
1 Teaspoon Cinnamon
1/2 Teaspoon Mixed Spice
1/2 Cup roughly chopped Pecan nuts
Topping
1 Tablespoon Muscovado or similar sugar
1/4 Teaspoon Cinnamon
8 chopped Pecan nuts
Mash the bananas and milk in a bowl and set aside.
Combine the butter, sugar and beat until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Add the Banana mixture and mix until blended.
Add the flour and remaining ingredients and mix well until the flour disappears - usually less than 1 minute.
Add the Pecan nuts and combine for about 30 seconds.
Transfer the mixture to a lined loaf pan and sprinkle the toppings.
Bake in pre-heated oven on 180°C for 40-50 minutes. In a small combo oven, bake at 165°C for 45 - 50minutes.
