Mom’s Corn Recipe
1 - stick butter
1 - 3oz bar of cream cheese
2 - 10 ounce boxes of frozen corn (unthawed)
Melt butter and cream cheese in a saucepan, then add frozen corn. Cover.
Stir with regularity. After about 45 minutes, it’s done!
Tastes just like fresh-from-the-cob!

Karen’s notes
· We use a double boiler to narrow down the chances of it sticking and burning, but if you stir it enough a saucepan is fine.
· I never really buy the 3oz bar of cream cheese or boxes of frozen corn. I get an 8oz bar of cream cheese and just cut off the portion I need and I usually buy bags of frozen corn and use the ounces I need.
· When I take this to gathering I often triple or quadruple the recipe…..
· I would not use fat free cream cheese, but the low fat would probably work as well as margarine instead of butter.
