The advantage of having a couple of generators is you can tailor your output to your use. You don't have to run a generator that will handle all your needs all the time, you can run a small generator when you need a smaller load and you can run two generators when you need to power a couple of large load items or a single large load like an air conditioner.

There are a couple of ways you can use multiple generators.
You can use different size gensets to power specific demands.
So you may have a generator that is set up to power your refridgerator and your air conditioner only and another that is set up to power your other needs.
You can buy the generators from Honda and Yamaha that are designed to be hooked together and work as a single unit. These work really well if you have different electrical demands that you plan on using your generator for.
The two generators hooked together can power a much higher electrical load. Another advantage is the generators are much lighter to move one at a time instead of moving around a bigger generator.
The problem with the generators that hook together is they are significantly more expensive and more complicated than running just one generator. If money is not the main issue they can be great for their ease of mobility and variability in power output.
Another major benefit of running tandem generators is the weight of each individual generator will probably be way easier to move than working with one large generator.
