Asparagus with Balsamic and Basil

ASPARAGUS WITH BALSAMIC AND BASIL

1 1/2 pounds of asparagus, trimmed 1/4 cup olive oil

5 teaspoons balsamic vinegar 1/2 teaspoon salt & pepper

pinch brown sugar 1/4 cup chopped fresh basil

2 shallots, chopped fine

1. Place asparagus in a large frypan in a small amount of boiling salted water. Cook covered for 3-5 minutes, or until tender. (do not overcook) Drain and put into an ice water bath to cool quickly. Drain and place in a shallow dish.

2. In small bowl, combine vinegar, brown sugar and shallots. Gradually whisk in oil, then salt and pinch of pepper. Whisk in basil.

3. Pour vinaigrette over asparagus, turning gently to coat. Cover and let stand for about 1 hour. Sprinkle lightly with pepper.

Serves 6 (not in my house, lol)
