CORN & BLUEBERRY SALAD

This salad is a hit at every table. You can use fresh or frozen berries and corn. If using the frozen berries the salad will take on a purple shade throughout.

1 bag frozen corn, or fresh off the cob

2 cups blueberries, fresh or frozen

2 mini Persian cucumbers or half of a long English cucumber

1/4 cup minced red onion

1/4 cup fresh cilantro, chopped

1 jalapeno pepper, seeded and chopped very fine

2 to 3 tablespoons of fresh squeezed lime juice

1 to 2 tablespoons honey

2 to 3 tablespoons good quality olive oil

1/2 teaspoon of ground cumin

1/2 teaspoon of salt

    1. In a large bowl gently combine corn, blueberries, cucumber, onion, cilantro and jalapeno pepper. Avoid breaking up the blueberries.

    2. Mix together the rest of the ingredients in a shaker jar and pour over corn mixture.

    3. Cover dish and let sit overnight in the fridge.
