Beef Santa Fe Salad
8 ou nces stir-fry beef strips
1/2 teaspoon Cajun seasoning
4 cups mixed greens, cut into bite-size pieces
1/2 cucumber, diced
1/2 red onion, thinly sliced
4 sprigs cilantro
salad dressing
1. Cover beef strips with Cajun seasoning.
2. Heat the aircore 8" Fry Pan over medium-high heat. Add the beef strips and saute 5-6 minutes, or until done. Stir occasionally.
3. Mix the greens, cucumber, red onion and cilantro together. Add cooked beef strips and salad dressing.
Makes 2 servings
Warm Spinach and Chicken Salad
1/2 tablespoon vegetable oil
2 boneless-skinless chicken breast halves, cut into bite-size pieces
1/4 teaspoon ground ginger
1/2 cup chopped walnuts
1/4 cup orange juice
2 tablespoon white wine vinegar
4 cup spinach leaves, cut into bite-size pieces
1/2 red onion, thinly sliced
1 (11 ounce) can mandarin orange segments, drained
4 ounces sliced mushrooms
1. Heat oil in the aircore 8" Fry Pan over medium-high heat. Add chicken, ginger and walnuts and saute 10-12 minutes until chicken juices run clear. Stir occasionally.
2. Stir in orange juice and wine vinegar and heat thoroughly.
3. Mix spinach, red onion, oranges, and mushrooms together. Toss with cooked chicken mixture.
Makes 2 servings.
Chicken with Vegetables Stir-Fry
1/2 tablespoon vegetable oil
2 boneless-skinless chicken breast halves, sliced 1/2 inch thick
1 (16 ounce) package frozen stir-fry vegetables with noodles
1/4 cup stir-fry sauce
1. Heat oil in aircore 8" Fry Pan and hat over medium-high heat. Add chicken and stir-fry 10-12 minutes or until chicken juices run clear. Stir occasionally.
2. Stir in frozen vegetables and continue to cook on medium-high for 8-10 minutes or until vegetables are tender crisp.
3. Mix in stir-fry sauce and cook until thoroughly heated.
Makes 2 servings.
