Sweet Italian Peppers are bright red or orange mild sweet peppers with little to no heat (0-100 SHU). They were originally grown in Italy and were brought to America in the early 20th century. They are not commercially grown, but can be found through small farms at farmer’s markets. Sweet Italian Peppers are an excellent source of vitamin C, and provide some vitamin A, folate, manganese, and vitamin K. The peppers are versatile and can be roasted, fried, and grilled. They are great to put in stews, stir fries, and salads. They pair well with cheeses like mozzarella, romano, gouda, feta, and parmesan; garlic; onions; herbs such as basil*, thyme*, and parsley; tomatoes*; and meats such as sausage, prosciutto, poultry, and beef. Pepper may be stored in the refrigerator whole, unwashed in a plastic bag for around a week.
