Kale is a green leafy vegetable that, like collards, is nutritionally dense. It is rich in vitamins, fiber, antioxidants, and minerals, but low in calories. One cup of kale provides over 100% the recommended daily intake of vitamins A and C with only thirty-three calories. Kale may be used in salads and smoothies as well as baked, boiled, steamed, and roasted. It pairs well with bacon, sausage, onion, garlic, and sharp cheeses, and is complimented by apples and cranberries. Kale may be stored up to a week in the crisper drawer in the refrigerator. Wrapping the ends in paper towels and placing them in a plastic bag will help keep it fresh.
