Dino Kale, also known as Tuscan kale, lacinato kale, and black kale, is a dark green, leafy vegetable. It can be used like any other kale, but is sweeter and less bitter. The entire leaf and rib may be eaten raw or cooked. It has a mild sweet nutty flavor that is great for braising, stews, sautes, salads, and chips. The leaves may also be used for wraps. Dino Kale is a good source of fiber, calcium, antioxidants, and vitamins A, C, and K. It can be refrigerated for 5-7 days in loosely wrapped plastic. Wrapping stems in moist paper towels can help to preserve freshness. To prevent Dino Kale from becoming limp, wash just before use.
