Fun Fact: During medieval times in France Lavender was used as currency.
Lavender is in the mint family, and is the second most popular herb, after Basil. Its uses include culinary, medicinal, aromatherapy, and skincare products. It is known for its calming effect, but is also beneficial for digestive health and provides antioxidants. Lavender is used in sweet and savory dishes, from baked goods to spice rubs for meat. It is also used to flavor beverages and to infuse honey. It pairs with lemon, honey, rosemary, and mint. To store lavender, place it in a container of water, like flowers in a vase, and place a bag over the lavender and keep in the refrigerator. Lavender may also be placed in damp paper towels and placed in a plastic bag. For longer storage lavender may be frozen or dried.
