Brown Sugar Cookies Article

I started by taking all of my ingredients out so I knew where they all were. I did not buy anything for this recipe; it was just stuff in my house already. I also took out two bowls, my hand mixer, a baking sheet, and all the cups and teaspoons. I recommend doing this too so you have everything ready before you start. That way you aren’t scrambling while in the middle of baking. I only used a little help from my brother mixing everything together. I only added chocolate chips to a separate quarter of the dough for everyone else. I am allergic to chocolate so the other three quarters of the dough was for cookies that I could eat. I forgot to preheat the oven before making the dough so I did it after; I know, I know…step 1. This did not really affect the cookies; they just had to sit there lonely for a while. I put parchment paper on a baking sheet. I then used an ice cream scoop to put them on the parchment paper because I like my cookies thick. When they were done I picked them up with my hands and put them on a plate covered in aluminum foil to bring to the rest of the newspaper crew. Everyone on newspaper really enjoyed them and commented on how these weren’t normal small cookies which made them better.
Ingredients
2 ¼ cup of all-purpose flour
1 tsp baking soda
1 tsp salt
2 sticks of salted butter
¾ cups of granulated sugar
¾ cups of brown sugar
1 tsp vanilla extract
2 eggs
Optional
Chocolate chips
Assorted nuts
Steps
Preheat oven to 375
Combine flour, baking soda, and salt in one of your bowls.
Beat butter, granulated sugar, brown sugar, and vanilla extract in your other mixing bowl until creamy
Add eggs, one at a time, beating well after each addition
Gradually beat in flour mixture
Stir in morsels and nuts if you want to add them. (I did not do this part)
Using an ungreased tablespoon (or an ice cream scooper like I used), put scoops onto a greased baking sheet
Bake for 10 minutes until outside is golden brown

Chocolate Cheesecake Article

One weekend, I made chocolate cheesecake. My dad helped me with the difficult parts. Mixing all the ingredients together took 30-45 minutes long. After I was done baking the cheesecake filling, my dad and I had to wait 2 hours for it to cool down, then another 30 minutes to cool down. We decided to taste it the next morning because it was already late when we got done making it. The next day, I had my younger brother try it. I let him finish and tell me how he felt about it. He said it tasted great. I didn’t have anyone else try it because they said they didn’t really want to eat anything at the moment. I tried it and also thought it tasted good. The only problem I had was not having a mixer for mixing the cream cheese. I used a whisk, but this was difficult because the cream cheese wasn’t soft enough. This is the step I had my dad help me on. If you are mixing by hand, make sure your cream cheese is softened. Even though it took a while to make, it’s worth the wait.
If you like chocolate and cheesecake, you’ll definitely love chocolate cheesecake. Here's what you’ll need to make it.
Crust:
24 Oreos (or if you don’t like oreos, any chocolate cookies)
4 tablespoons of salted or unsalted butter
¼ cups of sugar
Cheesecake filling:
½ cup milk
2 cups of semi sweet chocolate chips
1 teaspoon espresso powder for enhanced flavor
three 8-oz packages of cream cheese. (room temperature)
1 cup of sugar
4 large eggs (room temperature)
1 teaspoon of vanilla extract
2 tablespoons of flour

Crust steps:
Preheat the oven to 375℉. Lightly grease a 9” pan
To make crust: crushgrind cookies together with the sugar, if desired, set aside about a tablespoon of the crumbs to garnish the finished cake
Add the melted butter, processing briefly or stirring until the mixture is evenly crumbly. Press the moist crumbs into the bottom and part way up the sides of the prepared pan. Place the pan on a baking sheet, to catch any potential drips of butter
Bake the crust for 15 minutes. Remove it from the oven and set it aside as you make the filling
Cheesecake filling:
Reduce the oven heat to 350℉
To make filling: combine the milk and chocolate chips in a small saucepan or microwave safe bowl or large cup. Heat, stirring frequently, until the chips melt and the mixture is smooth. Remove from the heat, stir in the espresso powder, and set the mixture aside
In a large mixing bowl, beat together the cream cheese and sugar at low seed, until thoroughly combined, Scrape the bottom and sides of the bowl, and beat briefly, just until smooth
Add the eggs one at a time, beating to combine after each one, then stir in the vanilla, then the flour
Add the chocolate/milk mixture, beating slowly until thoroughly combined, scrape the bottom sides of the bowl, beat briefly just until smooth
Pour the batter atop the crusts in the pan, place the pan on a baking sheet.
Bake the cake for 45-50 minutes, poke with a toothpick into the cake 1” from the outside edge until it comes out clean
Allow it to cool in the oven for 1 hour. Remove it from the oven and let it cool on a rack
Garnish the cake with the reserved crumbs, serve it in small slices. (optional)
Mac and Cheese Casserole Article

For my recipe I made mac and cheese casserole. In my opinion it was very good and fairly easy to make, especially the noodles. It was a little difficult making the sauce, but not too hard. I had a little help from my grandma making the sauce, but I did most of it myself. My nephew also helped, but all he did was stir the noodles and hold the strainer when I strained the noodles. I think if I added different types of cheese it would have been better. I also added taco seasoning to give it more flavor. For the breadcrumbs, I used a premade container, but you can make your own by toasting bread and crumbling it. I rate this a 9/10 because it is a really good recipe for family dinners or dinners with your friends.
For Macaroni and Cheese Casserole you need:
1 box Elbow Pasta
Half a stick of Salted Butter
1 cup All-purpose Flour
¼ cup Half and half Milk
A pinch of Seasoning Salt
A pinch of Black Pepper
Sharp cheddar cheese
Mozzarella Cheese
Breadcrumbs enough to fill the top
Instructions:
Boil the pasta
Sauce: melt butter in a large pan and add flour and whisk it together
Then add half and half
Then add the cheeses, seasoning salt, and black pepper
Then pour the noodles into a glass pan and then the sauce on top and mix
Then add shredded cheese to the top
Sprinkles breadcrumbs over the shredded cheese
Put it in the oven for 25 minutes on 350 degree heat
