225g cold butter, diced
350g plain flour
100g golden caster sugar
1 small egg
pinch of salt
icing sugar for dusting
Jar of mincemeat
Rub the butter into the flour, mix in the golden caster sugar and a pinch of salt.
Bring the dough together into a ball (no liquid needs adding) and knead it briefly.
Grease 2 patty tins (fairy cakes or tarts are made in these, not cupcakes and muffins), take a walnut-size piece of dough and press into the bottom of each hole (makes approx. 18).
Spoon some mincemeat into each hole and taking slightly smaller pieces of dough, press them into flat lids for each pie. Alternatively, roll out remaining dough on a floured surface and use cutters to make the lids. Press the edges together to seal the pie.
Beat the egg and lightly brush the tops of each pie. Bake in an oven at 200C (180C fan) for 20 minutes or until golden brown. Leave to cool in the tin for 5 minutes before removing from the tin. Lightly dust the mince pies with icing sugar before serving.
