100g butter (softened)
150g brown sugar
1 egg
1/2 tsp vanilla extract
200g self-raising flour
50g chocolate chips
2 x 90g packets mini eggs (any brand)
Preheat your oven to 180C (170C Fan) and line/grease 3 baking trays.
Beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract and mix thoroughly.
Add the flour and stir it in. Crush one packet of the mini eggs into smaller, broken pieces and add these and the chocolate chips to the dough mixture. Stir until well combined.
Put large even dollops of the cookie mixture onto the baking trays. Space them out as the cookies will spread when they are heated. Add some whole mini eggs to each cookie for extra decorations.
Place in the oven and bake for 8-10 minutes. They are done when they are a little flattened and a little golden (they will continue to cook a little more even once they're out the oven!). Transfer to a wire work once cooled.
