Ingredients
2 cups flour
2 tsp baking powder
½ tsp baking soda
pinch of salt
50 grams cold butter, chopped coarsely
¾ cup buttermilk, (if you don't have buttermilk you can make it by adding a few drops of lemon juice or white vinegar to milk)
Filling
30 grams butter, softened
¼ cup brown sugar
2 tsp ground cinnamon
Instructions
Preheat Oven to 200C Line a baking tray with baking paper
Sift flour, baking powder, soda and salt into a bowl, rub in chopped butter with your fingertips. Add enough buttermilk to mix to a soft sticky dough. Turn onto a floured work surface and knead lightly until smooth.
Roll out into a 30cm x 40cm rectangle.
Spread dough with extra butter sprinkle with combined sugar and cinnamon (leaving a 2cm border along the top long edge). Roll dough tightly from the long edge nearest you. Cut roll into 12 x 3cm thick slices.
Place scrolls, cut-side down, into a lined baking tray, bake 10-15 minutes until risen and golden. Transfer to a wire rack to cool.
