Ingredients
Pastry
1 cup plain flour
4 tsp caster sugar
75 g butter cold and chopped
1-2 Tbsp icy cold water
Instructions
1. Place the flour, sugar and butter into a food processor and process it until it resembles fine breadcrumbs. Slowly adding the iced water until a smooth dough forms. (Shouldn’t be sticky so don’t add to much water )
2. Knead the dough into a ball on a lightly floured surface. Wrap in plastic wrap and place it into the fridge for at least 30 minutes.
Apple pie filling
2 apples
2 tsp sugar
½ tsp cinnamon
splash of water
Peel apples and cut into 2cm cubes and place in a pot with the sugar, cinnamon and water, cook until water has absorbed and apple is soft but not mushy, allow to cool.
When you're ready to use your dough, roll it out on a lightly floured surface with a rolling pin until it is 1-2 mm thick. Line pie dish with pastry and spoon apple filling into the pastry, top with a solid lid or crisscross thin pastry strips (lattice).
Bake the pie in an oven preheated to 180 °C for approximately 20 minutes or until lightly golden and crispy.
Note : tinned apple can be used, ½ cup apple, 2 tsp of sugar, ½ tsp cinnamon this won't need to be cooked prior to putting in the pastry
