- After visiting Chipotle near the end of 2011, I decided I wanted to try to do a vegan and oil-free version of their rice and beans for home made burritos. In reality this really tastes nothing like their rice and beans but it's still good.
- 1c brown rice (fast-cook rice is fine)
- 2c water
- 1 tsp chopped cilantro
- ¼ tsp salt
- juice from ½ lime
- Put the rice and water and in a small sauce pan and bring to a boil
- Cover, reduce heat and simmer for 10 minutes
- Remove from heat, add salt, lime juice and cilantro and stir well
- 1 can black beans, drained and rinsed
- ½ tsp cumin
- ½ tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp black pepper
- Put all ingredients in a small sauce pan and simmer for 5-10 minutes
- Remove from heat and drain off extra water
- Use 2-3 Tbs of the beans and ¼ to 1/3 cup of the rice in a soft taco size tortilla shell. Top with salsa (my current favorite is Trader Joe’s Garlic Chipotle) and chunks of avocado.
