GACHAS

This sweet treat will delight lovers of "galgerías". With a soft scent of cinnamon and lemon, it also contains aniseed and anise. If it weren't for the fried bread, it would remind you of custard or Catalan cream; however, this sweet is very unique and is usually served in a square-shaped dish.

VIROLOS

This typical sweet from Baeza is made of a delicious puff pastry so delicate that it stands out for its lightness and softness. Powdered sugar and "angel hair" (a type of sweetened pumpkin preserve) are added to it to create a bite fit for the gods. It is recommended to accompany it with coffee or tea.

LOMO DE ORZA

This typical dish from the slaughter season provides pork meat with excellent flavor, as it is prepared in its own lard to which spices such as cloves, cinnamon, black pepper, bay leaf, garlic, oregano, and lemon are added.

OCHÍOS

The basic recipe consists of the combination of extra virgin olive oil, paprika and anise. You will find it as a tapa in any bar or restaurant located in Úbeda, and they are usually filled with all kinds of food: from the traditional eight stuffed tuna and tomato to others with stewed meats, blood sausage, chorizo, chacina or cheese.  


PIPIRRANA 

A fresh dish with vegetarian options is the pipirrana jaenera. A dish with four vegetables, cucumber, onion, pepper and tomato, cut into very small cubes whose dressing is made in a saucepan with a clove of garlic, a little damp bread, cumin grains and a little coarse salt. The final ingredient is tuna in oil, which gives the final touch to this unique dish from Jaén cuisine. 

HORNAZOS

A sweet with a long tradition that is consumed especially during Holy Week is hornazos. It is made with greased bread dough and a little sugar on top. At its heart it contains a hard-boiled egg as the perfect complement to this delicacy that any visitor would appreciate for a good snack. 

BORRACHUELOS

This is a famous sweet which is very easy to do. The traditional way to prepare them is to fill them with angel hair or sweet potato cream, therefore as a result of the outside part being crispy, this make them have a delicious texture.

CARACOLES

They are a very famous "tapa" (it's a kind of snack that people like to eat before the main dishes) here. You will be able to find them in almost all the bars and restaurants. Snails with mint are made with: 1 kilo of snails, cayenne, 1 ripe tomato, half head of garlic, 2 cubes of chicken broth, 1 bunch of fresh mint and food coloring. 



ANDRAJOS

It consists of a stew of pieces of flour cake with a sauce of tomato, onion, garlic, red pepper, sometimes cod and rabbit. It is a dish of country people and is consumed in winter.

GARBANZOS MAREADOS

A delicious chickpea pate to accompany any dish from fried eggs to toast.

MORCILLA EN CALDERA

Piece of pork, ram or cow casing, or similar material, filled with cooked blood, which is seasoned with spices and often onions, and to which other ingredients such as rice, pine nuts, bread crumbs, etc.

GACHAMIGA

A type of cake made from flour, water, olive oil, garlic and bacon. A simple dish but full of flavor.
