Choosing something just because it's easy is good, but you should chose something that you are actually interested in, otherwise you will get bored during the process and lose motivation.
Start working on your product as early as possible, if you procrastinate too much and leave it till the end its not fun. Trust me.
Keep your process journal up-to-date and as detailed as possible, it helps when you're writing your report.
Don't focus on just one aspect of the personal project, the report and product are equally important.
Many of you might think that the project is useless and will have no impact on your future, but that is not true. Learning to handle a project of this scale so early is good for us students and will help us a lot in the future.
