Chef & Accommodation Management 

Lodge Chef & Manager - Available at Nozawa Only

Description

Canyons require two people to manage and cook for Nozawa Onsen ski school staff accommodation for the duration of the winter season. This position would suit a couple or good friends as there is shared living quarters and similar hours of work. 

You will be required to cook breakfast and dinner 6 days per week and shop every other day in the local town. Breakfast includes hot and cold days and runs between 06:30 and 09:30. It is buffet style. Typically, only one person needs to be present during cold breakfast days to keep the kitchen tidy and to keep an eye on the breakfast stocks. Dinner hours are from 16:00 until 20:00 with food being served at 18:30 for the staff. You will be expected to prep the food, cook, clean down the kitchen and put away the dishes during the hours stated. 

You will be required to cater for any special dietary needs. Vegetarian, gluten free etc. Be able to cook 13 to 14 different dishes which you can rotate over a bi-weekly basis. You will mostly be cooking for ski instructors who have been working all day on the mountain burning a lot of energy. The meals should be: filling, nutritious, flavoursome and come in large portions (there is a book of dishes from previous cooks but your own ideas and input are more than welcome).You will be in charge of money for buying food, therefore, you will be responsible for keeping appropriate records of receipts and spending on a spreadsheet.

You will also be responsible for organising a cleaning rota for all of the communal areas of the house e.g. Showers, lounge, toilets, sinks, hallways, dry rooms, ski room and snow clearing. The instructors/tenants are expected to clean these areas. You will be required to check the cleaning has been done. Cleaning of these areas should be done at least 3 times a week. Keep track of communal cleaning products and toilet roll restock when required. Deal with any maintenance work. If major, report it to Head Office so it can be dealt with ASAP.

There will be plenty of time in between to be able to ride legendary Japanese powder while living in a beautiful Japanese town, if this appeals to you apply now for the upcoming season!

Lodge Manager - Available at Yuzawa Only

Canyons require one person to manage the operations of Yutoge Heights in Yuzawa.

You will be required to organise a cleaning roster for all of the communal areas of the lodge e.g. hallways, dry rooms, ski room and snow clearing. The instructors/tenants are expected to clean these areas. You will be required to check the cleaning has been done. Cleaning of these areas should be done at least 3 times a week. Keep track of communal cleaning products and toilet roll, kerosene and restock when required.  (including restocking kerosene for other apartments). Deal with any maintenance work. If major, report it to the Head Office so it can be dealt with asap. Be able and willing to set and enforce basic house rules. Ensure instructors are treating accommodation and each other with respect and care e.g. loud noise/parties in the lounge should go no later than 10 pm, this shows respect for other instructors and other local residents. Ensure recycling and rubbish disposal is done correctly. Make sure relationships with neighbours is maintained. Welcoming new staff, preparing their rooms and checking rooms when they leave. You will need to take and keep a record of any guests staying.
