Tequila Shrimp

I serve this delicious, spicy shrimp several ways, as a surf and turf combo with grilled beef tenderloin, over rice or pasta and as an appetizer as I did at a recent dinner party. Any way you serve them, these shrimp are wonderful!

Serves 4-6

2 lbs. shrimp raw, peeled and deveined.

Marinade - combine together the following ingredients:

½ cup olive oil

1 tsp salt

¼ cup tequila

¼-1/2 tsp cayenne

2-3 cloves minced garlic

½ cup Heinz, or your favorite brand of chili sauce

½ tsp red pepper flakes or to taste

Marinate shrimp in a zipper bag overnight with marinade ingredients.

Preheat grill to medium-high.

Thread marinated shrimp onto skewers. I like to thread the skewer through the tail and body so the shrimp don't twist on the skewer when turning over on the grill. If using bamboo skewers soak them in water for at least 30 minutes before threading the shrimp.

Grill shrimp skewers 2-3 minutes per side depending on the size of your shrimp and serve.
