Creamy Orange Yogurt Pops

Adapted from Everyday Food - June, 2012 Issue

1 cup thawed orange juice concentrate

1/3 cup sugar

2 cups full-fat plain yogurt (I used Greek yogurt)

2 teaspoons pure vanilla extract

Combine orange juice concentrate and sugar in a small saucepan over medium-low heat.  Stir over heat until sugar is dissolve, about 3-4 minutes.  Add yogurt and vanilla to orange juice mixture and stir to combine. 

Transfer to a pitcher or measuring bowl with pouring spout and pour into ice-pop molds and insert sticks.   Freeze until solid, about 6 hours (or can be kept frozen for a week in advance). 

Briefly run molds under hot water to release pops. 

Depending on the size of your molds, this will make 6-10 pops. 

My Notes:  I would probably dilute the orange juice concentrate just a little - maybe with 1-2 tablespoons of milk.  Also, instead of Greek yogurt, I'll try regular yogurt next time.
