My Gingerbread Cookies

~from Savoring Time in the Kitchen

1 cup powdered sugar

1 cup butter or margarine

1/2 cup molasses

1 egg

1 Tablespoon vinegar

2 teaspoons cinnamon

1-1/2 teaspoon ground ginger

3-1/2 (approx) cups flour

1-1/2 teaspoon baking soda

1 teaspoon salt

Cream sugar and butter together until smooth. Add next 5 ingredients and mix until just blended. In a medium bowl, whisk together flour, baking soda and salt. Add to butter mixture and mix just until incorporated.

Pat dough into a ball and wrap thoroughly in plastic wrap or a plastic zipper bag.  Refrigerate for at least 1 hour or up to several days.

When ready to bake, preheat oven to 375F.

Remove dough from refrigerator and cut in half.  Roll each half out on a floured surface to 1/4" thickness and cut into desired shapes. Scraps can be gathered and rolled out again.

Sprinkle with colored sugar and add cinnamon decorations, if desired.

Bake in preheated oven for 7 to 8 minutes.
