Zinc-Boosted Beef and Spinach Stir Fry

Ingredients:


400g beef fillet, cut into thin strips

2 cups fresh spinach

1 red pepper, cut into strips

1 red onion, cut into thin slices

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

2 tablespoons low sodium soy sauce

1 tablespoon honey

1 teaspoon rice vinegar

Salt and pepper to taste

Cooked brown rice (optional, to accompany)

Instructions:


In a small bowl, whisk together the soy sauce, honey, and rice vinegar. Reserve sauce mixture.


In a large skillet or wok, heat the olive oil over medium-high heat.


Add the beef and sauté until golden brown on the outside but still juicy on the inside. Remove the meat from the pan and place it on a plate.


In the same pan, add the garlic and ginger. Sauté for a minute until fragrant.


Add the red onion and red pepper. Sauté for a few minutes until tender but still crisp.


Add the fresh spinach and stir until wilted.


Add the beef back to the pan and pour in the prepared sauce mixture. Mix well so that all the ingredients are coated with the sauce.


Season with salt and pepper to taste.


Serve hot over cooked brown rice if desired.
