Recipe for Beef Meatballs with Spinach and Garlic

Ingredients:

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1/4 cup chopped fresh spinach

2 cloves garlic, minced

1 egg

Salt and pepper to taste

1/4 cup olive oil

1 can (14 oz) crushed tomatoes

1 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon dried thyme

Instructions:

In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, spinach, garlic, egg, salt, and pepper. Mix until well combined.

Shape the mixture into meatballs, about 1 inch in diameter. You should get approximately 20 meatballs.

In a large skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.

Remove the meatballs from the skillet and set them aside.

In the same skillet, add the crushed tomatoes, dried oregano, dried basil, and dried thyme. Stir to combine

Return the meatballs to the skillet, making sure they are evenly coated with the tomato sauce.

Cover the skillet and let it simmer on low heat for about 15-20 minutes, or until the meatballs are cooked through.

Serve the meatballs hot, garnished with extra Parmesan cheese and fresh parsley if desired.
