Spinach and Chickpea Salad with Lemon and Honey Dressing

Ingredients:

For the salad:

2 cups fresh spinach

1 cup cooked chickpeas (can be canned, make sure to rinse well)

1/4 cup slivered almonds

1/4 cup pumpkin seeds

1/4 cup raisins

For the dressing:

3 tablespoons olive oil

2 tablespoons of honey

1 lemon (its juice)

Salt and pepper to taste

Instructions:

In a large bowl, combine the spinach, chickpeas, almonds, pumpkin seeds and raisins.

In a small bowl, whisk together the olive oil, honey, and lemon juice. Add salt and pepper to taste and mix well.

Pour the dressing over the salad and toss well to make sure all the ingredients are coated.

Serve the salad on individual plates and make sure to distribute the ingredients evenly.
