Okra although has a slimy texture and not really enjoyed by many, Nigerian okra soup brings out the local and earthy flavour to accentuate the dish. This soup can be paired by many sides like pounded yam, eba, semovita and many others.
Ingredients
Okra, scotch bonnet, red bell pepper, protein of choice, kale, palm oil, iru, crayfish, chicken bullion cube.
Preparation
Cook protein of choice and also blend okra on the side.
Once protein is tender, pour in the scotch bonnet and bell pepper mix and bring to a boil.
Add in blended okra, iru, crayfish and bring to a boil.
Add your bullion cube and stir.
Pour in your palm oil and turn to low heat and simmer for ten more minutes
Serve and enjoy with your side of choice
