Moi-Moi is a yummy Nigerian bean delicacy that can be cooked in different ways. Can be enjoyed with freshly baked bread, garri, pap or eko.
Ingredients
Beans (Honey beans / Black eye beans), Scotch bonnet, Red bell peppers, Onions, Chicken bullion, Crayfish, Boiled eggs, Mackerel fish chunks, Cooking oil.
Preparation
Soak beans in water then peel the shaft away.
Step one hack; add beans to a blender with water to cover it then pulse like five to seven times.
After beans is peeled, add to blender with washed scotch bonnet, onions and red bell pepper.
Pour blended mix into a bowl and add in your cooking oil, crayfish, chicken bullion and mackerel chunks.
Add water to your pot and bring to a boil.
Stir in a clockwise direction for 5 mins.
Prepare your banana leaves or glass muffin jar.
Pour in the mix into the jars and put your halved boiled eggs.
Carefully place your muffin jars into the boiling water.
Cook on medium heat till done then serve and enjoy.
