I've performed all of these with various musical friends and relations at assorted Christmas concerts and gatherings over the years. Arranged for the ensembles available at the times!

All seems as normal for a while, then the piece morphs into a laid back Jazzy version. For two violins and piano.
Ten years later, I made a revised version (even more slushy...)
O Come O Come Emmanuel
Easy and effective arrangement for Flute, Clarinet, Violin and Piano. This is the favourite of my Christmas arrangements and it's easy to play - I played it myself with a few friends one Christmas and it's very effective I think. I particularly like the entry of the violin where it crescendos to the the low B on bar 5 which always gives me the shivers. Also I was keen for everyone to have a turn of the verse.

Gaudete arranged for 2 violins and Bb Trumpet.
Coventry Carol
I've made 3 versions of this in very easy arrangements, but practice the slightly unexpected violin rhythms that occasionally catch people out. My favourite version is this one for Piano, violin and Bb clarinet.
If you don't have a clarinettist, but you have two violinists (and a pianist!) then use this version
