3-4 stalks of Celery (chopped)
2 medium onions (diced)
2 medium green peppers (diced)
2 cloves of Garlic (diced)
2 tablespoons butter
2 lbs of smoked sausage (sliced)
3 large chicken breasts (cooked and cubed)
2 C long grain white rice
2 cans (or one box) Chicken broth
Cajun Seasoning to taste
Salt/Pepper
Sauté the peppers, onions, garlic and celery until translucent. Add in the sausage to brown.
Then add everything else, bring to a boil and reduce heat to simmer. Simmer approx 30 minutes.
