Spinach

Super nutritious green, although the idea that it has Popeye level amounts of iron in it is actually due to a typo and not actually true.

HOW TO STORE: In a closed container in the fridge with paper towels.

HOW TO USE: Before we started growing our own, I (Brad) would sometimes go through multiple 1 lb clamshells of this stuff a week. My favorite was to make a big salad with spinach, little bit of olive oil, a berry of some sort (usually strawberry), a nut of some sort (usually almonds or walnuts), and feta cheese. These large lunch salads, often eating in the clamshell where a regular talking point at my workplace...I like to think it was out of jealousy and not because of how big they were.

Another favorite preparation of ours is to use a whole bunch of it in a pasta dish with olive oil, feta cheese, garlic and onions. Because it is so good raw and cooked, it really stands out as a green for us.
