Potatoes

This year, we grew a few types of potatoes: Magic Molly, a dark purple potato that stays purple when you cook it, Peter Wilcox, a medium purple on the outside, yellow on the inside variety, and a russet potato.

HOW TO STORE: These potatoes haven't been "cured" for long term root cellar storage, so you're best off eating them sooner rather than later. If potatoes are stored below 45 degrees, their sugar content will increase and they will brown faster if fried. For this reason, we would suggest putting them in a paper bag (to keep them out of sunlight) on the counter.

HOW TO USE: Po-tay-toes! Boil em, mash em, stick em in a stew. Lovely big golden chips with a nice piece of fried fish.
