225 g (8 oz)Â Self Raising Flour

100 g (4 oz)Â margarine
75 g (3 oz) mixed dried fruit
25 g (1 oz) mixed peel
50 g (2 oz) caster sugar
1 medium egg
1-3 tablespoons of milk to mix (don't add this all at once, add gradually)
Heat oven to 200ÂșC / 400ÂșF / Gas Mark 6. Grease two baking trays (I used greaseproof paper instead.)
Mix the flour and salt, rub in the margarine / Bertolli light.
Stir in the dried fruit, mixed peel and sugar.
Mix to a stiff dough with egg and milk.
Place in rough heaps on the lined baking tray and bake for 10 â 15 minutes.

1 packet chocolate chipsâ
Methodâ
Cream together the sugar and margarine using a wooden spoonâ
Add the eggs and vanilla extractâ
Sieve the flour into the bowl and add the chocolate chipsâ
Stir well until it forms a doughâ
Place the dough on a lightly floured surface and divide into 16 equal piecesâ
Roll into balls and place on a baking tray with parchment paper, flatten slightly with a forkâ
Cook 180C / Gas 4 for 10 â 15 minsâ
Remove with and place on a cooling rack.â
