All plants have five total stages, 0-4. To check what stage it is at, click F3 and look at the right side. If it says it is at stage 4, it is harvestable. Here is a full list of plants with their item names and what they drop. Some items are shaped like saplings or sugar cane, but they all grow like wheat or potatoes.
