12: Bieres de la Meuse Saison (Mandarina)

Bieres de la Meuse Mandarina (French Saison) #01

My standard Saison was such a fantastic brew thought time for another batch this time using Mandarina hops and some Cara malt for an orange colour to compliment the hops.

Yet again a lovely drink, colour and hops worked very well, just perhaps not so well as my usual Sorachi version.

Notes: Pump up the FV temp to 20 deg C to get the most from those funky flavours... it would have been brewed in August in France, so can handle (and loves) the heat!

Ingredients:

4.5 kg Pale ale malt
500g Car malt

Hop Profile:

15g Sorachi Ace at 60 minutes
15g Sorachi Ace at 30 minutes
16g Sorachi, 25g Mandarina Hop stand 10m
75g Dry hop Mandarina

Yeast: Mangrove Jacks French Saison M29

Mash/Sparge:

Mash 70°C for 75 minutes, 3.5 gal,

Sparge 80°C to gather 5 gal of wort.

Boil: 60, no Irish moss added as want cloudy.

OG: 1048 (5 US gallons)

On bottling day, condition with half teaspoon of white sugar. Very hungry yeast and very lively with so can handle less priming sugar.

Rest bottles one week warm then one week cooler.
