Florence Bingham's Easy Chicken

2 frying chickens cut into serving pieces, or use 8 thighs and legs or 8 breasts

¼ cup honey

¼ cup soy sauce

½ cup ketchup

¼ cup lemon juice

Salt and freshly ground pepper

Line a shallow baking dish with foil and place the chicken pieces in it loosely. Mix the flavoring ingredients and pour over the chicken. Allow to marinate several hours, turning once or twice. Place a piece of foil over the chicken and bake 1 hour at 325°. Remove the foil and baste the chicken. Return to the oven without the foil for an additional 20 to 30 minutes. Serve

with rice.
