Oatmeal Cookies

These are cholesterol free but not low in fat so should be eaten only occasionally. (Ha! That's what the recipe says so I left it there.... but how can you eat any cookies only occasionally?)

1 cup shortening

1 cup brown sugar

1 cup granulated sugar

3 egg whites

1 teaspoon vanilla

1 ½ cups flour

1 teaspoon baking soda

3 cups oatmeal

1 cup raisins

Thoroughly cream shortening and sugars. Add egg whites and vanilla. Beat well. Add flour and soda to creamed mixture. Mix well. Stir in oatmeal and raisins. Drop onto ungreased cookie sheets. Bake in preheated 350 oven for approximately nine minutes. Makes about 50 cookies.
