Hearty Oat Bread

3 - 3 ½ cups flour

1 ½ tsp. salt

½ cup quick-cooking oatmeal

1 pkg. active dry yeast

¼ cup packed brown sugar

1 ¼ cups very warm water

1 Tblsp. Margarine softened margarine

Mix 1 ½ cups of the flour, the oats, brown sugar, 1 Tblsp margarine, the salt and yeast in large bowl. Stir in water; beat on medium speed 2 minutes, scraping bowl occasionally. Stir in enough of the remaining flour to make dough easy to handle Knead on lightly floured surface 5 minutes. Place in greased bowl; turn greased side up. Cover; let rise in warm place 1 hour or until double. (Dough is ready if indentation remains when touched.)

Grease large cookie sheet. Punch down dough; divide into halves. Shape each half into round loaf. Place on cookie sheet. Brush with softened margarine. Cover; let rise 30 minutes or until double. Heat oven to 375 . Bake about 22 minutes or until loaves sound hollow when tapped. Remove from cookie sheet; cool. Makes 2 small loaves.
