These were served for lunch on 9/25 along with Barbara Conrad's "dump soup" of sausage corn chowder.
A Cuban Sandwich, sometimes called a cubano, is a Latin version of a grilled ham & cheese. Recipe source:

Ingredients:
1 Loaf of Cuban Bread (Substitutes: French or Italian Bread)
1 pound cooked ham (sliced)
1 pound roasted pork* (sliced)
1/2 pound Swiss cheese (sliced)
dill pickles (sliced) – or Grace’s Sweet Angel pickles
Yellow mustard or Mayonnaise – or Publix dijon
Preparation:
1. Preheat oven to 45.
2. Brush bottom of bread with olive oil. Slice bread horizontally in half (to fill)
3. Spread the mustard or mayonnaise on the bread. Then make each sandwich by layering the pickles, roasted pork, ham, and cheese. (we used some fresh Cuban oregano from our garden)
4. Put the filled bread on a foil-covered – cover with extra foil - sprayed baking sheet
5. Cover bread with foil (tent-like)
6. Put a heavy skillet on top of the sandwich to flatten it. Press for about 20 minutes.
7. remove the skillet, open the foil, and heat in the oven until cheese melts (about 5 minutes).
8. remove from oven, lightly lay foil on top, replace skillet on sandwich for 5 minutes
9. slice DIAGONALLY into 2-3” slices. Place slices on serving platter and serve
*Pork was cooked with LOTS of garlic and rubbed with turmeric (for a yellow color)
Grilled Hummus Sandwich

We didn’t grill this one, but it was good.

Number of Servings: 10 – 12 per loaf
Ingredients
Hummus, 2 Tbsp per sandwich
Cilantro spread, 1/4 cup, fresh, chopped
Red Ripe Tomatoes
Sweet Vadalia onions and cucumber marinated with olive oil and lemon (we actually used Annie’s Sesame Goddess Salad dressing to echo the hummus)
Swiss Cheese, 1 slice (optional)
*1 baton of multi-grain peasant bread
Olive oil
Directions
If using a loaf, cut the loaf in half horizontally. Spread the hummus over the bottom slice of bread, then put cilantro on the other slice of bread, and put tomato, onions, cucumber and cheese in the middle. Drizzle remaining marinade over the veggies. (Add the second slice of bread, buttered side up. Grill over medium heat, turning when the toast starts to brown.) Or skip the grilling and cut the loaf into diagonal slices and serve.
