Ingredients
1 1/4 rolled oats
1 C coconut
1/2 C all-purpose flour
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1/2 C butter
3/4 C packed brown sugar
3 T honey
1/2 C semisweet chocolate pieces
Pecan halves (optional)
Whole dried apricots (optional)
Directions
In a large mixing bowl stir together oats, coconut, flour, baking powder, cinnamon, salt and nutmeg. In a small saucepan cook and stir butter, sugar
and honey over medium heat till sugar dissolves. Remove from heat; pour over oat mixture. Mix well.
Grease 1 3/4 inch muffin pans. Place 1 tablespoon of the oat mixture into each prepared muffin cup. Bake in a 350* oven for 12 to 14 minutes or till
golden brown. Cool in pan for 10 minutes. Using a knife or small metal spatula loosen edges and remove munchies from pans. Cool completely on wire
racks.
Meanwhile, in a small heavy saucepan melt chocolate over low heat, stirring till smooth. Dip the narrow end of each munchy into chocolate; let stand,
dipped side up, on waxed paper. Top with a pecan or apricot cut into a heart shape.
Makes 32 munchies.
