Ingredients
1 egg
0.25 cup fine dry bread crumbs
0.25 teaspoon salt
0.25 teaspoon white pepper
1 pound ground turkey
0.25 cup minced parsley
0.25 cupchopped green parsley, including tops
8 strips bacon
Cranberry sauce (below)
Beat egg in a bowl; stir in bread crumbs, salt, and pepper and let stand for 1 minute. Add turkey, parsley, and onions; mix lightly until well combined. Divide mixture into 8 equal portions and shape each into a 3.5 inch long log. Wrap in a strip of bacon spiral-fashion around each log (optional: secure ends of each strip with a wooden toothpick).
Place logs on a broiling pan. Bake, uncovered, in a 450 degree oven for 20 minutes or until turkey meat is no longer pink when slashed. Meanwhile prepare cranberry sauce; place in a serving bowl to pass at the table. Makes 4 servings.
Cranberry Sauce
1 can (8 oz.) whole berry cranberry sauce
3 tablespoons sugar
3 tablespoons water
0.5 cup golden raisins
0.25 teaspoon ground cinnamon
0.25 teaspoon grated lemon peel
1 tablespoon lemon juice
0.125 teaspoon ground cloves
In a 1 quart pan, stir together ingredients. Cook over medium heat, stirring occasionally, for 10 minutes or until heated through.
