Beginner Foods is an introductory level course where students will be introduced to the elements of food preparation while working in a collaborative setting. Teamwork and food safety are emphasized in this course. Creativity, critical thinking and independence will be supported as students explore culinary techniques and tools, ethical, social and sustainability considerations. Students will also analyze the causes and consequences of foodborne illnesses through the FoodSafe Level One Certification.
Important note: Foods 9 Beginners and Foods 10/11 Beginners are the same course.
This course is an intermediate level course where students are able to expand upon their knowledge of food preparation skills learned in Beginner Foods. Students are supported as they take creative risks to enhance their knowledge and understanding while working in a collaborative setting. Teamwork and food safety are emphasized in this course. Students will build critical thinking skills through the exploration of a variety of topics including meal and recipe design, food culture, ethics and marketing.
Important note: FoodSafe Level One Certification is not offered in this course.
This is an advanced level course where students will engage in activities that allow them to reflect on their knowledge and skills for the purpose of setting new goals. Students will work independently and collaboratively to execute complex meal preparations. Students will be encouraged to take creative risks within their meal preparations and to reflect on opportunities for refinement. Teamwork and food safety are emphasized in this course and critical thinking will be challenged through various recipe design opportunities.

Cafeteria is a fast-paced course emphasizing teamwork, communication, and positive work attitudes needed in commercial food preparation and service. Students gain knowledge of culinary methodology and best practices through participation in a variety of cooking and baking tasks. Individuals and groups will engage in problem-solving and creative thinking related to timing, sequencing, tools, and anticipating challenges to achieve a task. Participation in Cafeteria class provides students with insight into the foodservice industry as well as the experience, competence, and confidence needed to succeed within this dynamic environment.
Catering 9-12 is a course designed to expose students to commercial food preparation. Participation will allow students to explore the foodservice industry both creatively and critically through a variety of tasks that involve analysis of event planning, menu development, scaling, and social and environmental considerations. While engaging in a variety of collaborative and individual tasks, students will gain proficiency in culinary technique and best practices, improve teamwork skills, and gain awareness of the impact of food-related decisions on themselves and the global community.
Participation in Textiles 9-10 will provide students with the opportunity to explore and practice a variety of textiles techniques and mediums. The focus of this course is the development and refinement of skills and interests through hands-on practice, reflection and feedback.
Students will be supported and encouraged as they explore creative interests, engage in design activities, become critical consumers and challenge their ability.
Textiles 11 provides students with the opportunity to expand their knowledge and abilities within specific areas of interest as well as experiment with new ideas, techniques and technologies. Reflecting on prior experience and feedback, students will challenge their critical and creative thinking as they refine their technical skills through hands-on practice and build their understanding of the textiles industry on a local and global scale. Throughout the course, students will explore the impact of competing social, ethical, economic and sustainability considerations on the availability of textiles items and how these conditions influence a person's decisions to buy certain clothing items.
Textiles 12 provides students with the opportunity to extend their knowledge and task-specific skill within their areas of interest. While participating in this course, students will identify and analyze new design possibilities based on consumer needs and task criteria and constraints. Students will be supported as they engage in project design and management, goal setting, and critical evaluation of ability, design requirements, feedback, tools, and materials. Knowledge of social, ethical and environmental considerations will be expanded upon and incorporated throughout.
