During these cold months having a warm dish is essential. My personal favorite cozy meal has always been soup because it is a simple pick-me-up that will give you a cozy feeling and a full belly. There's nothing better than a low effort meal that doesn't take long to make and tastes amazing. Creamy chicken and dumpling is personally one of my favorite soups. For this recipe you will need:
Ingredients for dumplings:
1 ½ cups all purpose flour
2 teaspoons baking powder
1 teaspoon table salt
½ teaspoon black pepper
3 tbs minced chives
⅔ cups sour cream
¼ cup + 1 tbsp milk
3 tbsp reserved bacon fat or melted butter
Ingredients for soup:
5 strips of diced bacon
4 tbs of unsalted butter
1 small yellow onion diced
1 leek (white and light green parts only) sliced
3 carrots peeled and diced
3 ribs celery diced
¼ cup flour
1 teaspoon dried rubbed sage
½ teaspoon dried thyme
6 cups of chicken stock
3 cups of shredded chicken (rotisserie chicken works)
1 cup heavy cream
Salt to taste
Pepper to taste
Instructions for making the dumplings:
Mix all of the dry ingredients together in a mixing bowl
In a separate bowl mix all of your wet ingredients
Fold the wet ingredients into the dry ones (once there are no more flour clumps the dough is ready to go)
Use a cookie scoop or a small measuring cup to insure all of the dumplings are the same size
Instructions for making the soup:
Render the bacon- cook the bacon on low until it is crispy and has released the fat
Make the dumplings (directions above)
Saute the veggies- cook on low until soft, then add a little flour to remove the vegetables raw flavor
Add the chicken broth bit by bit and keep stirring so no clumps form
Once the soup is simmering add the chicken, cream, and bacon and season the soup to taste
Drop the dumplings in then let it simmer for 15 minutes
