Undergraduate Community Nutrition Experience

Educating nursing home residents on the importance of Lutein and eye health.

In various retirement homes around the in the Fargo-Moorhead communities, I have educated senior citizens on the importance of the moderation of sodium in the diet as well as the the benefits of lutein in an elderly person's diet. All lessons included education on the sources of these nutrients and their recommended appropriate intakes as well as a game of Bingo that summarized the lesson.

"Eye on Nutrition" Lesson Plan

As a volunteer for the Healthy Cooking in the Classroom program through Family Wellness, I helped elementary aged children prepare nutrient-rich snacks while teaching them about the prominent macronutrient in each recipe.

I had the opportunity to educate Concordia's CobberKids Daycare children. We talked about the importance of "Mr. Calcium," the bone construction worker. After teaching the kids about the sources and importance of calcium, we played an interactive game with food models.

As a Meals on Wheels volunteer, I learned about the needs of individuals with physical and/or medical limitations while delivering weekly meals to disabled members of the community. Meals on Wheels broadened my understanding of the obstacles people face dealing with access to food, such as physical and financial burdens.
