I am a Dietetic Intern at CentraCare Saint Cloud Hospital. I have finished community rotations at Reach Up Head Start, Gymboom, food services rotations at the College of Saint Benedicts, and Medical Nutrition Therapy in Oncology, Surgical, Medical, Medical Progressive Care, and Cardiac Intensive Care Units. During those rotations and with the support of the dietitians, my nutrition assessment skills have been significantly improved. As a result, I successfully accomplished my 4-week full-time staff relief in Oncology, Medical, Medical Progressive Care, and Cardiac Intensive Care units. Thanks to the DI program, I feel confident to take the RD exam and become an inpatient dietitian.
Since August 2019, I have been working as a Nutrition Assistant for Concordia Dining Services. My main responsibility is to check for the allergens, calories, and nutrient information in each recipe that will be shown on the TV above each station, so students can choose foods that are appropriate to their health status. In addition, I and other nutrition assistance students work on weekly projects such as designing table tents that provide nutritional information for the students, the special breakfast bar, or the special Monday recipe that suggests some healthy recipes for the cobbers. When completing all the projects, I also help other stations such as meals on wheels or daycares. Due to the pandemic, table tents are not available currently. Starting from January 2019, I applied and was nominated to become a Dining Services Student Manager. Not only working at a single station in Anderson Commons, I oversee all the students' shifts and stations to make sure students are doing their jobs great, and stations are in good shape. Moreover, I also effectively communicate with customers and help to train new student workers, so the whole DS can function smoothly. Working as a Student Manager is not an easy job in which I need to balance between helping other student workers and supervising all the stations to ensure that foods are ready to be served to all the customers. However, I have chances to practice communication skills, leadership skills, and food service skills.

In the summer of 2021, I worked for a girl summer camp named Camp Lake Hubert. I was in the position of a special dietary need cook who takes care of cooking foods with special dietary requirements such as allergen-free, vegetarian, and vegan. Every day, I serve about 90 special dietary needs meals and 600 normal ones for the campers and staff members which was such a challenging job. This is because the kitchen staff members were only five people including me. Moreover, they do not have the cooking and food safety knowledge which makes everything more difficult. However, I was willing to share my food service experience and cooking skills, so we were in a good workflow after a short period of time. This internship was a really valuable experience in cooking for children. Children are the susceptible population due to their weak immune systems, so it took time and effort to prepare nutritious and safe meals for them.
I did this internship in my freshman summer that gave me many interesting experiences in organic food cultivation. I worked with an Environmental Studies student and a farm supervisor. We cleaned the grass, dug the soil, implanted the seeds, and collected the final products. In addition, we sold a part of the harvest and donated the rest of it to the Cobber Food Pantry. I did research on the myth of organic products' benefits to human health. I found that their value is not in the nutrient properties, but it is about the pesticide-free characteristic and hard work of growing them. These factors explain the more expensive price of organic foods compared to traditional ones.
I have participated in Cobber Food Pantry several times throughout the academic year. I donated food and went to pick up food baskets from multiple locations on the campus. I love this activity because it is spreading the community caring to all students who are in need of food and I want to be a part of this cozy community.
