During Service
Our current opening hours are -
10am - 9pm Monday to Thursday (JP kitchen opens at 12pm)
9am - 9pm Friday to Sunday (JP kitchen opens at 11am)
Although anytime within our opening hours can be busy, generally speaking our service times are as follows.
Monday to friday 12pm-2pm 5pm-8pm
Saturday and Sunday 12pm-3pm 5pm-8pm
Fridays and Saturdays can often be busy through the afternoon right up to dinner service
Sundays can also be busy up till 5pm when it will often chill out.
During these times follow these guidelines.
If its busy
Just focus on service unless a task is urgent. Try and stay at the counter or on the floor
Stay on top of essential tasks, serving customers, taking out food and drinks, clearing tables, topping up napkins, topping up water and glasses and keeping the front counter area clean and organised.
When it's busy you need to move quickly and try to maintain the diners stock levels and cleanliness. This will really help in the between times. It also enhances the customers experience
Some of what you should be doing during these times is explored in the sequence of service document, like welcoming guests and saying goodbye etc.
Try and keep all sauce trays, napkin holders, chairs and tables straight and tidy. Chairs especially should always be tucked under the tables in a uniform way.
Keep a close eye on tables leaving to make sure they are cleared straight away.
If it's not busy
The focus should still be on the floor and tasks as above
If it's not crazy busy, this is a good time to complete any tasks on your list, ideally prioritise tasks that can be done out front at the counter or on the floor.
