Donut staff Foh procedures.

Diner Setup. (Monday - Thursday)

• Check the outside area is clean and tidy, if needed pickup any rubbish and use the leaf blower or broom to remove leaves.

• Take outdoor furniture out and setup, try and keep it all lined up and straight, chairs tucked in neatly

• If tables are unstable, place a piece of cardboard underneath the table leg so tables are stable. One of the cutlery pouches would work well or whatever is at hand, but just make sure it looks tidy and won’t slip out.

• Check to make sure outside tables are clean, sometimes at night some stains will be missed. If so just use a chux and pink spray to wipe

• Inside, put chairs down and make sure they are tucked under tables neatly. Make sure tables are clean, if needed wipe with a chux and pink spray.

• Turn on the lights. Turn on fans everyday and heaters or air con as needed.

• Get the float from safe and put in the till, turn on Hubster ipad, switch on the button for outside music.

• Grab out at least 4 water bottles and place on water tray, get filter coffee and place on counter

• Check and wipe perspex on the donut trolly, using blue spray and paper towel, clip on donut labels.

End of shift daily,

• Leave some back ups glazed, check with front of house

• Make sure glazes and any utensils are put away.

• Try to leave all the glazing trays in the back kitchen clean and backups on paper.

• Butter to be wrapped or covered

• Dough break to be dusted daily (especially underneath) and covered with white cloth

• Benches and doors cleaned thoroughly, microwave cleaned, Floor mopped including the hallway just outside the donut kitchen.
