Make a great burger that anyone could access. We opened the truck every Friday night at an unused nature strip in Brunswick. All types of people came from all over Melbourne, Our menu was intentionally small and our focus was to be delicious and consistent. I had started offering a breakfast menu in 2010 and on that menu was a potato breakfast taco with jalapeno ricotta and salsa verde. People loved the potato tacos but I hated waking up early after a night of service then prep. The space was also crammed , We couldn't keep up so in 2011 I decided to open up a dedicated Taco Truck.
The idea was a breath of fresh air to the streets of Melbourne. So Many people worked so hard to build up these trucks to be able to work 2 or 3 nights a week on the street. We had no warehouse and I would have to start the truck generator and ask the suppliers to deliver to the food truck at a
Specific time (when the fridge in the truck was cold and an hour before service) Everything was done by hand. We loved it, our intentions were pure, We just wanted to make the best food we possibly could with the limitations of the truck.
In 2012 we moved into our first warehouse in Hope St Brunswick and things got a bit easier. We had a coolroom, a shelf to store drinks and set up a desk.
We had only done a handful of catering jobs but we could see that this was going to be part of our growth. Parking on the street was raw, unpredictable and I loved it! I never wanted to stop this but the demand for catering started to outgrow the demand for the street service. I needed more trucks.
We added 2 more in 2013. In 2014 I put some recipes together and had the honour of having them published , Hungry for That was my first cookbook. In this book I reflect upon the great produce that we can access in melbourne and the recipes were a reflection of the way that i like to cook for parties. Fresh and vibrant!
In 2014 we also moved into a bigger warehouse in Edward st. I ran out of money in the build and all of the tiling and painting was done by me. I wanted to open a diner but I had no money left.
I had been trying to perfect donuts and I attended a market under the name All Day Donuts. I had no equipment so I asked the local bakery if I could use their mixer to make my dough. It was a very hot day, and I checked on my dough that I had in the coolroom at 11pm . It was growing out of control and was starting to degas, The dough was ruined and the bakery was now shutting. I then stayed up all night, made all the dough on 2 kitchen aid mixers and cooked each donut individually in a small pot of oil. I finished this process at 7am , with no sleep I went to the market and on the way I picked up some icing sugar and glazed the donuts at my stand once we opened. I was stuffed. I recognised this day that I have problems , but the donuts were delicious! A few months later We opened our shop 2 days a week.
A year later I opened Juanita Peaches Diner, I found a pressure fryer on Gumtree for $499. This was a find and I decided to open for fried chicken and donuts. Early days were rough, inconsistent staff and some customers were really confused about our offering. I never like to spell it out completely for the customer , I like customers to work things out for themselves sometimes. The sense of discovery is important to me , Romance , I love it.
In 2017 we opened our first Beatbox kitchen shop in Brunswick, We also opened in Fitzroy in 2018 but closed soon after due to a failed lease arrangement. My proudest moment was in 2019 when our community supported our first charity event, the Flipathon. The flipathon made a donation of over 28K to YSAS, ( youth service)
In 2019 we added our 3rd taco truck and in 2020 we will add our 3rd Beatbox kitchen.
Our values evolve and so does our business and community.
