Qualities and Taste:

Well ripened quite sweet, plenty of acidity, firm juicy flesh, but usually slightly bitter underlying taste. Cooked, keeps shape, bright yellow, good flavour, quite sweet yet brisk flavour, well suited to open tarts. Also used for cider in Normandy. (Source: JM).
